The Best Gluten Free Flour for Muffins
There are many different gluten free flour blends to choose from. I have a homemade gluten free flour mix that works well, but many store-bought versions are also good. I’ve had success with King Arthur’s Flour and Bob’s Red Mill.
With a gluten free flour blend, you can usually just substitute it for white flour cup for cup. If you’d rather use another naturally gluten free flour like almond flour or oat flour, you may not be able to simply swap it out for white flour in your favorite recipes.
How to Store Gluten Free Muffins
As with other gluten free baked goods, the texture of gluten free muffins is best the day they’re made. They can get a bit gritty by the second or third day. Once they’re done cooling, I like to freeze any muffins that won’t be eaten within 2 days. They can be defrosted at room temperature or warmed up in the microwave.
How to Keep Gluten Free Muffins from Falling Apart
Xanthan gum is a binding agent that’s used in many gluten free flour mixes. It helps to give baked goods structure and keeps them from falling apart. The proper proportion of wet and dry ingredients is also important if you want to achieve a nice moist texture in your gluten free muffins.
Gluten Free Baking Tips
- Batter: The batter should resemble regular muffin batter. Using eggs, baking soda, baking powder, and other traditional muffin ingredients results in a similar product. For best results, always follow the recipe instructions carefully.
- Mix-ins: Muffins are so easy to customize with different mix-ins. If you’re adapting a recipe by substituting the mix-ins, be sure to maintain the proportions listed in the original recipe so the mixture has the same moisture level.
- Muffin pan: Use cupcake liners or spray your muffin pan with baking spray. I typical fill the muffin tins about 3/4 of the way full for good-sized muffins that rise nicely.
- Baking time: Muffins usually take about 20 minutes to bake. Ovens do vary, so be sure to check the gluten free muffins with a toothpick before removing them from the oven.
