    Frittatas are typically made of eggs and a variety of mix-ins including vegetables, cheese, and/or meat. The filling variations are endless, so this is a great dish to keep your meal plan interesting!

    How to Make a Mexican Frittata

    Ingredients

    • Ground Beef – I use organic grass-fed ground beef for this Mexican frittata recipe.
    • Taco Seasoning – Store-bought taco seasoning is an option, but I recommend making your own taco seasoning and keeping it on hand for other Mexican-inspired recipes. 
    • Salsa – Classic medium red salsa is delicious in this recipe, but any salsa is fine to use.
    • Green Pepper – Chop a medium green pepper, or substitute a bell pepper in a different color.
    • Plum Tomatoes – Use fresh plum tomatoes from the garden or produce section of your market.
    • Scallions – Green onions give this Mexican frittata recipe a nice flavor. You can substitute regular onion if you’d prefer.
    • Eggs – Use organic large eggs if possible.
    • Cheddar Cheese (optional) – Sharp cheddar cheese is a great choice, but this frittata is very flavorful even without the cheese if you want to keep it dairy-free.

    Step One: Cook the Ground Beef

    In a medium oven-safe skillet (e.g. 8-inch seasoned cast iron skillet), brown the ground beef in the olive oil over medium heat. Add the taco seasoning and salsa. Stir to coat evenly, then remove the seasoned meat from the skillet.

    Step Two: Cook the Green Pepper

    Add the green pepper to the skillet and saute for a few minutes, until crisp tender.

    Step Three: Add the Remaining Ingredients and Bake

    Add the meat back to the skillet, along with the tomato and scallions. Pour the scrambled uncooked egg on top, and sprinkle with the salt and cheese. Bake the egg mixture for 20 to 25 minutes, or until the frittata is set and no longer jiggly.

    It’s easiest to cut this frittata if you let it sit for about 10 minutes before cutting. If you try to cut it right when you take it out of the oven, it will be hard to get clean slices.

    Mexican Frittata Recipe Substitution Suggestions

    You can skip the cheese if you’re avoiding dairy. Substitute chorizo for the ground beef, and use any other vegetables or cheese to mix up the flavor.

    Leftovers can be stored in the refrigerator for several days in an airtight container. Reheat the leftovers in the oven before serving. You can also freeze the extra frittata if you won’t eat it within four or five days.
